I have a small farm in North Carolina with a couple Jersey cows and a few Saanen goats. Dairy is just a minor sideline for us, but I'm eager to learn more low-tech/old-fashioned ways to make cheese. Could you recommend a source to buy a smallish lever style press? Also, I have homemade buttermilk, yogurt, and rennet (dried, salted abomasum). Do you think I can make good cheeses with just these ingredients? Do you know what farmstead cheesemakers used for cultures before laboratory cultures?
