A cheese named Miranda

Last December, Miranda, my wife, died. She was a big supporter of my cheese making venture and a beacon for me to hold on to when I was overcome with doubt. One of her wishes was for me to make a cheese and name it after her. Here it is at the Bedford Cheese Shop in New York City. She would have been very happy and extremely proud that I have come this far.

How wonderful! I wish you nothing but the best - you're living my dream! I will seek you cheese out next time I'm in the city. If you're looking for another New York cheese shop, I might look upstate, to the darling Little Bleu Cheese Shop, outside of Rochester, NY. It's a little closer for me than NYC.

Best of luck and lots of success!

Jos, wat erg voor je en wat knap dat je doorgaat en een kaas naar haar hebt genoemd. Sterkte, kerel!

Jos, I have so much respect and admiration for what you're doing, have learned from your example for awhile. I was so saddened to read of this, your great loss. I'm just a guy from from Madison, not a pro, but a brother in craft; if this humble wish could be, that your pain eases with time, my heart goes out to you. You're fitting testament, doing these acts of love in making such food. Thank you for all you do. ~ ArnaudForestier (Paul).

La fromagerie est située à New York et Miranda serait très heureuse de savoir que son mari est arrivé aussi loin dans son entreprise.
