Stilton style result


Well, here it is, the cheese after five days. Pretty moldy already, I think the cheese has to much air in it. The curd was probably to dry when I put it in the form. I should have pressed it a little. If the mold keeps growing at this rate than it will soon be a big green glob.

that's some extremely green cheese, jos. great job! how did it TASTE though? we just found a farm a couple miles away that sells raw milk legally. they're licensed to do it. no milk right now, because the cows haven't had their babies yet. they're belted galloways, and extremely happy-looking, anthroposophical-rudolph-steiner-type cows. can't wait to try some.
