Dutch cheese press


I built two Dutch cheese presses in anticipation of making some Goudas.

I would love to know where you found plans to build one of these. I think this is what I need for my cheese, rather than a screw type press.

How do you adjust for weight using the dutch style press? If a recipe calls for the cheese to be pressed at 20 lbs.... how would you set the press up to do that? I see numerous holes on the press arm.... is that how? Any details on how to use the the press with weight would be greatly appreciated! Great job by the way and thanks!

I simply increase the weight which hangs from the lever arm.
The hole you see are there to raise the stamp so cheeses of different heights can be pressed.

Awesome! Thanks for posting up so quickly! I love making homemade cheese but haven't done it in quite some time.... so I am looking to start up again. I even turned out mini wine fridge into a cheese maturation cave! hahaha Thanks again for the info and pics of your great looking presses!

Thanks for posting all the great ideas and pictures and things you have on your blog. I have a small farm in North Carolina with a couple Jersey cows and a few Saanen goats. Dairy is just a minor sideline for us, but I'm eager to learn more low-tech/old-fashioned ways to make cheese. Could you recommend a source to buy a smallish lever style press? Also, I have homemade buttermilk, yogurt, and rennet (dried, salted abomasum). Do you think I can make good cheeses with just these ingredients? Do you know what farmstead cheesemakers used for cultures before laboratory cultures? In any case, thank you for everything you've shared on the internet.
